Stuff your peppers up to a day in advance to make a QUICK and easy dinner for a busy weeknight (Just remember to add 10 minutes of cooking time if prepared in advance). 1 lb ground chicken or turkey
1 can black beans
1 can sweet corn
1 packet taco seasoning
1 -2 cups pasta sauce
2 tbsp olive oil
1 tsp oregano
salt and pepper
3-4 red, yellow or orange peppers
Preheat oven to 400 degrees F. Add a thin layer of pasta sauce to bottom of baking dish. Place peppers cut side-up in a baking dish and drizzle with olive oil.
Add ground chicken to skillet and season with oregano, salt and pepper. Cook over medium high heat until fully cooked. Add 1 cup pasta sauce and 1 packet taco seasoning. Mix until sauces coat the meat. Add black beans and corn. Add a handful of shredded cheese. Continue to stir until mixed. Let simmer until liquid has reduced slightly, about 5 minutes.
Spoon chicken mixture into each pepper and top with shredded cheese. Bake until peppers are tender, about 30 minutes.
