For anyone that is new to my blog, I am from Buffalo, NY (actually Niagara Falls). That means I grew up on Buffalo Sauce (hello, Buffalo Wings)! Thankfully I married someone that shares my love for hot sauce, so naturally we add it to everything. Buffalo Chicken Pizza is on a regular rotation in our house. I am also half italian which means I LOVE pasta. I could eat pasta every night of the week if my family allowed me to. So, why not combined my two loves into one recipe?
Next time I am going to include some spinach which I think will be a delicious addition to this recipe.
1 lb Ground Chicken (or ground turkey)
Salt + Pepper
Buffalo Sauce (I used Sweet Baby Rays)
Shredded Cheese (I used a Mexican Mix)
Crumbled Blue Cheese, for garnish (if desired)
Preheat oven to 350 degrees F.
Season ground chicken with salt and pepper. Brown chicken in skillet over medium high heat until cooked through.Add 2 tsp Buffalo Sauce and mix until all chicken is covered. At the same time, cook jumbo shells according to package instructions.
Place a thin layer of Buffalo Sauce at the bottom of baking dish.
Combine ricotta cheese, shredded cheese and chicken. Once shells are cooked, scoop spoonfuls of chicken mixture into individual shells and place into baking dish. Top with a layer of shredded cheese.
Place shells in oven and cook for 15-20 minutes, or until all cheese is melted.
