I FINALLY made it to Asheville. If you love hiking and waterfalls, then Pisgah National Forest is the place for you. After spending the day in the woods, be sure to book your hotel downtown to enjoy some delicious craft beer and food in walking distance. Spend the evening shopping and visiting the cute boutiques and art galleries Asheville has to offer. I'm obsessed!
Since I spent my weekend away, I decided to cook a simple Grilled Caesar Salad for dinner. I tasted a similar dish at a local restaurant several months ago, and decided to try my hand at it. DELISH!
Hope you enjoy a few of my favorite photos from the weekend!
GRILLED CAESAR SALAD
2 heads romaine lettuce, trimmed and halved lengthwise
Extra Virgin Olive Oil
Coarse salt and freshly ground black pepper
2 tablespoons lemon or lime juice
Shaved Parmesan Cheese
2 anchovy fillets, optional
Heat a cast-iron grill pan. Brush cut sides of the romaine lettuce with olive oil. Generously sprinkle with salt and pepper. Grill until charred and blackened in a few places, about 2-3 minutes.
Place the lettuce pieces on desired platter. Drizzle with olive oil, lemon juice, and shaved Parmesan. Garnish with anchovies, as desired. Top with croutons and Caesar dressing, and ENJOY!
